Smothered Burritos as Seen on ABC 15's Sonoran Living Show
Gilda’s Smothered Burritos
Basic Concept: This dish is a jazzed up version of the traditional enchilada style burrito. It is simple and affordable. This dish is enjoyed by kids and adults alike because you can control the heat in the dish through choosing the right sauce. Fill your tortilla with beef and bean filling, pour over bean sauce and/or red sauce, and cover with assortment of toppings. Serves 6-8
Ingredients: Red Chile Sauce
10.5 oz. Prepared Red Enchilada Sauce 3 t. onion powder
(Old El Paso)
1 T. Chile Powder 1 ½ t. salt
½ t. garlic powder 1c. water
½ t. pepper 1 ½ T Flour
Add all seasoning to enchilada sauce and bring to a boil. Add 1 cup of water with 1 ½ T flour to thicken sauce. Simmer for 30 minutes.
Ingredients: Beef and Bean filling
2.5 c. of dry beans prepared with salt pork. Salt & Pepper
1 lb. of hamburger 1 c. salsa
Garlic Powder to taste (½ t.) Tortillas
Cook your beans with salt pork (1/3 lb.) Depending upon method allow 2- 4 hours. Do not drain beans; you will need bean broth for later.
Fry hamburger over medium high heat adding seasoning and salt/pepper to taste. Drain off the fat, leaving a little for flavor. To this add the salsa and simmer for about 15 minutes.
While the beef simmers with salsa, prepare your bean sauce.
In a blender puree about 1 cup of the prepared beans with 1/3 cup of the bean broth and 3 T. of Red Chile Sauce. Blend until smooth and creamy, with an easy to pour consistency. This makes about 2 cups of sauce.
Continue your beef filling by adding the remaining beans. Simmer the mixture mashing slightly, for another 15 minutes. If a little dry, add more salsa or bean broth to your liking. Turn to low and keep warm.

Tomatoes
Olives
Green onions
