Zesty Papa Protein Scramble
4-6 Hickman Eggs
6-8 Cooked Red Potatoes
1 1/2 Cups Cheese
1 Cup Avocadoes, sliced/diced
1 Cup Cooked and diced Bacon or Sausage
1 Cup Diced Green Chiles
Bunch Cooked and chopped Spinach, optional
Pinch Chopped Parsley, optional
2 Tbsp Butter
1 tsp Lemon Pepper
1 Fresh Lemon or Lime Juice
1 Cup Chopped Artichokes
Directions
In large skillet melt butter, reheat potatoes and fold in bacon, spinach, green chilies and avocadoes. When hot enough crack eggs on top of potato mixture. Done within minutes. Wrap in tortilla. Great for camping!! One skillet used. Optional toppings: Sour cream and jalapenos
